Christmas Side Dishes - Creamed Leeks & Bacon

Ingredients

  • 3 – Leeks
  • 1⁄2 – Brown Onion
  • 1 – Clove Garlic
  • 2 – Rashers Bacon
  • 100ml – White Wine
  • 100ml – Double Cream

Christmas Side Dishes - Creamed Leeks & Bacon

Serves 6.  Christmas side dishes really make a Christmas meal, add this one to your repertoire and your family will thank you forever.

  1. Chop bacon, add to a saucepan with a little olive oil.
  2. Slice leeks, onion and garlic, after a few minutes, add to the bacon.
  3. Season with sea salt and black pepper and cook for a further 3-4 minutes until softened.
  4. Add the white wine, reduce it by about half, add the cream and reduce it again by half.
